Red Curry, known in Thai as ‘Gaeng Phed’, is a classic Thai dish and when done right it’s my favourite Thai dish of all! This is quite the statement because I am a HUGE Thai food fan.
The original recipe, a blend of red curry paste with shrimp, coconut milk, and meat, has been slightly altered in vegan-friendly spots around Bangkok. Now it can be embraced by the vegan community, proving that tradition can evolve to be inclusive and compassionate.

Some Fun Facts About Thai Red Curry
Origins – How one of the best dishes in the world came to be: Red Curry has been a staple in Thai cuisine for centuries, with its roots said to be intertwined with the introduction of chilli peppers in Thailand during the late 1600s.
Colour and Heat: The vibrant red colour traditionally comes from dried red chilli peppers, which are also responsible for the curry’s signature heat. Plants are incredible when you take the time to think about it! But historically, these chillies aren’t native to Thailand or even Asia. They were introduced by Portuguese traders from South America in the 1600s.
The Art of Making Paste: Making red curry paste is considered an art in Thai cooking. Each family might have their own secret recipe passed down through generations, with some households still preferring to grind their spices by hand.
